How we smoke it
- Light Hill beef. Every roast comes from Light Hill Meats, our local butcher and farm in Middle Tennessee.
- Salt, then rub. A salt coat for a few hours, then our championship HAMmock Ranch beef rub goes on.
- Overnight dry brine. Uncovered overnight so the rub works in and the crust sets up.
- Low and slow smoke. Smoked the way Myron Mixon taught us, then rested so it slices juicy edge to edge.

Can I order prime rib outside the holidays?
Yes. We smoke prime rib all year long for any occasion: birthdays, anniversaries, Easter, Father's Day or a Sunday dinner. Request one on our order page. The holidays are just when it books up fastest.
How much is a smoked prime rib from VL BBQ?
Smoked prime rib is $35/lb plus a $75 smoke fee. Choose Choice or Prime grade and the size you need. A deposit holds your roast, and we email you to confirm.
When do Thanksgiving prime rib orders close?
Thanksgiving prime rib orders close Monday, Nov 23. Pick up the Tuesday or Wednesday before Thanksgiving, or Thanksgiving morning, in Spring Hill. Thanksgiving slots are limited.
When is Christmas prime rib pickup?
Christmas prime rib pickup is Wednesday, Dec 23 or the morning of Thursday, Dec 24 in Spring Hill, with local delivery available. Christmas orders close Monday, Dec 14.

Every roast comes from Light Hill Meats, our local butcher and farm in Middle Tennessee. Never warehouse, never grocery store.
How do you smoke your prime rib?
We salt the roast for a few hours, then coat it in our championship HAMmock Ranch beef rub and let it dry brine overnight. Then it's smoked low and slow the way Myron Mixon taught us, and it comes with homemade horseradish cream.
